Chilled Quinoa Cucumber Salad
A super yummy and refreshing lunch that is absolutely perfect for a summer day.
Ingredients:
1 cup of cooked quinoa
1 small cucumber (peeled and cubed)
2 Tbsp. of lemon juice
2 Tbsp. of extra virgin olive oil
Several leaves of fresh Thai basil (chopped)
Several leaves of fresh parsley (chopped)
Mix all of these together and add sea salt to taste. Place in the freezer for a few minutes.

Virgin strawberry daquiri soda.
Mix 1/8 cup of natural strawberry syrup, 1 Tbsp. of natural key lime juice, and 2 Tbsp. of pineapple juice. Fill the rest of the glass with Perrier. Stir and enjoy!
Now it’s time to unpack all of my stuff and organize this room.
It feels great to be home early.
I always hated Palatka. I still want to leave it….
But I missed home so much. I went to an old friend’s house yesterday and sat in his living room. He just happened to be in town visiting his mother.
We talked about everything, shared plans, and played music.
I forgot how much I missed him. Now he’s moving to California.
Today I get to see my friends. None of them know that I’m home. I’m nervous…but excited.
Today will be a good day.
